Stuffed Plantain Fry



Ingredients  

Plantain – 3
Poha – 1 cup, thin
All-Purpose Flour – 1/2 cup
Sugar – ½ cup
Poppy Seeds – 1 tsp
Coconut - ½ cup, grated
Cardamom Powder - 1 tsp
Cashew Nuts - 10
Raisin - 10
Baking soda – ¼ tsp
Salt – ½ tsp
Ghee – 2 tsp
Oil – for frying

Preparation

Rinse poha in water and drain out the water. Keep it aside.

In a hot pan add ghee,coconut,poha,sugar,raisins,cashew nuts and poppy seeds. Roast it for 2-3 minutes.

Make thick batter using all-purpose flour, rice flour, baking soda and salt. Keep aside.

Cut plantain vertically into half. Fill the mixture in one half and cover it with another half. Dip the whole plantain in the thick batter. Make sure plantain is well coated.

In hot oil, add plantains and fry till both sides turn golden brown.

Note

Can use jaggery instead of sugar.
