Masala Dosa



 Ingredients
 
For Dosa Batter

Rice – 2 cups
Urad Dal – 1 cup
Fenu Greek Seeds – ¼ tsp
Salt – to taste

For Filling

Potato-2, boiled & mashed
Cumin Seeds – ¼ tsp
Mustard seeds – ¼ tsp
Onion -1/2 cup, finely chopped
Green Chilly-1, finely chopped
Turmeric Powder- ¼ tsp
Ginger-1 tsp, finely chopped
Masoor dal- ½ cup, cooked
Hing – a pinch
Curry leaves - few
Cilantro – handful, finely chopped
Salt – to taste
Oil – 2 tbsp

Preparation

Saok rice and urad dal for 6 hours or overnight in water. Grind well. Add salt and keep aside for at least 5 hours to ferment at room temperature.

Cook masoor dal and keep it aside. Dal won’t be mashed up. Just to cook well.

In a heated skillet, add oil. Add mustard seeds to crackle. Add cumin seeds and few curry leaves. Add onion,turmeric powder, hing and ginger. Fry till onion gets soft. Add cooked dal, mashed potato and salt. Mix well. Sprinkle some cilantro.

In a heated tawa, grease oil. Make sure tawa is not so heat. If so, sprinkle little cold water on tawa . Pour some batter on tawa and spread thinly. Pour drops of oil on the edges of dosa. Keep 1 tbsp of potato filling on dosa and roll it when cooked.
