Mackerel Roast


Ingredients

Spanish mackerel - 5 pieces (medium size)
Onion - 1, thinly sliced
Tomato- 2, sliced
Green chilly – 2, slit
Red Chili Powder - 1 tsp
Coriander Powder - ½ tsp
Fennel Seeds - 1/4 tsp,crushed
Pepper -1tsp, ground
Ginger-1/4 inch, thinly sliced
Garlic-1, medium pod sliced
Fish Masala -1 tsp
Curry leaves
Salt-to taste
Oil

For Marinating

Chili Powder-1tsp
Pepper -1tsp, ground
Fish Masala – ½ tsp
Rice flour – ½ tsp
Salt-to taste

Preparation

Marinate fish for at least 30 minutes. Then shallow fry the fish. After done remove the fish from oil and add sliced onion and saute till it becomes soft. Add ginger and garlic and fry for 30 seconds. Add green chilly, tomato and saute well. Add the spice powders: chili powder, coriander powder, ground pepper and fish masala. Pour enough water and add salt. When the gravy boils, add fried fish. Cover it with a lid and cook  in a medium heat until gravy becomes thick. Add curry leaves and serve it with Rice or Roti.
