Beef Roast



Ingredients

Beef – 1 lb, cubed
Onion – 3 medium, sliced
Mustard Seeds – ½ tsp
Green Chilly -2, sliced
Garlic – 1 tbsp, crushed
Ginger – 1 tbsp, crushed
Cinnamon – ¼ inch stick
Cardamom – 2
Cloves – 4
Bay Leaf - 1
Red Chili Powder – 1 tsp
Coriander Powder – 1 tsp
Tomato – 1, chopped
Curry Leaves – A sprig
Salt – to taste
Oil – 2 tbsp

To Marinate

Red Chili Powder – 1 tsp
Coriander Powder – 1 tsp
Turmeric Powder – ¼ tsp
Pepper – 1 tsp, crushed
Fennel Seeds – ½ tsp, crushed
Salt – to taste

Preparation

Marinated beef should be kept aside for minimum 20 to 30 minutes. Then pressure cook it till it is well done. Reserve the beef stock as we can use this later.
Take a deep skillet and heat oil. When the oil is hot add mustard seeds and after it splutters add cinnamon stick, cardamom, cloves and bay leaves (Garam masala powder).Add onion and fry until it becomes dark brown in color. Then add ginger, garlic, green chilies fry them for another 30 seconds. Add chopped tomatoes fry well until it breaks down, then its time for red chili powder, coriander powder. After 30 seconds add beef stock. When it boils add cooked beef and curry leaves. Leave it in a low flame until the water dries out and it turns into dark brown color.

This yummy beef roast goes very well with rice as well as roti.

Beef Chili


Ingredients 

Beef – 1 lb, cut into 1 inch cubes
Onion – 1, chopped
Ginger – 1 tbsp, crushed
Garlic – 1 tbsp, crushed
Bay Leaves – few
Tomato – 3, chopped
Tomato Sauce/Tomato Paste – 2 tsp
Red Chili Powder – 1 tbsp
Coriander Powder – 1 tbsp
Cumin Powder – 1 tsp
Oregano Leaves – ½ tsp, dried
Lemon Juice – 1 tsp
Chicken Stock/Beef Stock – 1 cup
Red Kidney Beans – 1 cup, cooked
Kidney Bean Stock – 1 cup
Cilantro – 2 tbsp, chopped
Salt – to taste
Oil – for shallow frying

To Marinate

Red Chili Powder – 1 tsp
Turmeric Powder – ¼ tsp
Black Pepper – 1 tsp, ground
Meat Masala – ½ tsp, optional
Salt – to taste

Preparation

Marinate beef and shallow fry till both sides turn brown. Use the same oil, add bay leaves. Then sauté onion till soft. Add ginger, garlic and fry for few seconds. Sauté tomatoes. Add tomato sauce and lemon juice. Add masalas: red chili powder, coriander powder and cumin powder. Pour chicken stock. Add fried beef. Cover and cook in low flame for an hour. Add cooked kidney beans and its stock. Mix well. Add oregano as well. Cover and cook in low flame for another half an hour. Garnish with cilantro.

Chili Beef


Ingredients

Beef – 1½ lb,cut into strips
Oil – for frying

To Marinate

All-Purpose Flour – 1 tbsp
Rice Flour – 1 tsp
Corn Flour – 1 tsp
Chicken Stock/Beef Stock – 1 tbsp
Pepper – 1 tsp, ground
Salt – 2 tsp

For Sauce

Onion – 2, sliced
Ginger – 1 tsp, finely sliced
Garlic – 1 tsp, finely sliced
Red Chilly – 3, remove seeds & slit
Chili Garlic Sauce/Chili Sauce – ½ tsp
Tomato Paste – 2 tsp
Green Pepper – ½ cup, sliced
Sugar – ½ tsp
Chicken/Beef Stock – 1 cup
Corn Flour – 1 tsp
Salt – to taste
Oil – 2 tbsp

Preparation

Marinate beef and keep it aside for 15-30 minutes. Fry till it turns dark brown.

In a skillet, heat oil. Add red chilly, ginger, garlic and fry for 30 seconds. Add onion, green pepper and sauté till soft. Add sauces: soy sauce and chili garlic sauce. Add tomato paste and sugar. Combine well. Mix 1 cup of chicken/beef stock with 1 tsp of corn flour and pour to the sauce. Add fried beef and mix well. When sauce gets thicken, turn off the flame.

Beef Ularthiyathu



Ingredients

Cubed Beef – 1lb
Onion – 1,thinly Sliced
Green Chillies – 2,Slit
Garlic - 1tbsp,finely chopped
Ginger - 1btsp,finely chopped
Tomato - 1/2 cup,Sliced
Coriander Powder – 1tsp
Red Chilly Powder – 1 tsp
Beef Ularthu Masala-1tbsp
Coconut Slices – 1/4Cup
Garam masala – 1 tsp
Curry Leaves – A sprig
Salt – to taste
Oil – 2 tbsp

For Marination

Red Chilly Powder – 1 tsp
Coriander Powder – 1 tsp
Turmeric Powder – 1/4 tsp
Beef Ularthu Masala-1tsp
Pepper Powder – 1 tsp
Salt – to taste

Preparation

Marinate the beef with maslas and keep it for 30 minutes.Pressure cook the beef with coconut slices. Heat oil in a skillet and fry onions,green chillies and curry leaves until the onions become brown.Add red chilly powder,coriander powder,ularthu masala and garam masala Saute for 1 minute.Add cooked beef and mix well with the masalas. Add salt if required.Add sliced tomatoes and curry leaves.Fry the beef on low heat till water completely dries out and turns into a dark brown color.
Serve with Rice or Roti.

Note

Beef extracts some water while cooking.So no need to add water to cook.Left over beef stock can be used in the masala mix while cooking.

Beef Cutlet



Ingredients

Beef -1lb cooked & minced
Potatoes – 2 medium, boiled and mashed
Onion – 1/4 cup, chopped finely
Green Chilly-1 no, finely chopped
Red Chili Powder – 1/2tsp
Coriander Powder-1/2tsp
Turmeric powder-1/4tsp
Ground Pepper-1/2tsp
Garam masala-1/4tsp
Meat masala(optional)-1/2tsp
Ginger-1tsp,finely chopped
Garlic-1tsp,finely chopped
Cilantro-2tsp,finely chopped
Curry Leaves-2tsp,finely chopped
Bread Crumbs – for coating
Salt-to taste
Egg white-1
Oil – for  frying

Masalas for marination

Red Chili Powder – 1/2tsp
Coriander Powder-1/2tsp
Turmeric powder-1/4tsp
Ground Pepper-1/2tsp
Salt-to taste

Preparation

Marinate beef with red chili powder,coriander powder,turmeric powder,ground pepper and salt for 30 mins.Cook in a pressure cooker till it is done.Grind it in a blender and keep aside.
Heat oil in a skillet.When it gets hot,add onion fry till soft.Add ginger,garlic and green chilly.Fry for 30 sec,then add masalas.Fry well.Add grind beef and mashed potatoes.Mix gently.Add salt,curry leaves and cilantro.
Keep bread crumbs in a plate.Make cutlets of desired shape,dip in egg white and roll in bread crumbs.Make sure it should coat well with bread crumbs.
Fry in oil till both sides in golden color. Serve hot with tomato ketchup.
