Unnakaya - Traditional Malabar Sweet


Ingredients
 
Plantain – 4,ripe
Sugar - 5tbsp
Egg – 2, optional
Poppy Seeds – 1 tsp
Coconut - ½ cup, grated
Cardamom Powder - 1 tsp
Cashew Nuts - 10
Raisin - 10
Salt - a pinch
Ghee –  2 tsp
Oil – for frying

Preparation

Steam or boil plantain till it turns tender.Peel off the skin and mash it well. Keep it aside.

In a pan add ghee,coconut,sugar,raisins,cashew nuts and poppy seeds.Roast it till coconut turns golden color.Scramble eggs in another pan and mix it with coconut mixture.Sprinkle little salt to it.

Make lemon-sized balls from  plantain ,flatten  and add 1tbsp of  coconut mix to it. Make into a oval shape. Seal well.

In a hot oil,add  plantains and fry till both sides turn golden brown.

Note

The consistency is not thick or unable to make into a shape add little all-purpose flour.While shaping,apply little oil on your palm, so it will not stick.
